Hi John-Paul,
I'm not aware of any best practices documents, but there are a few things that might help you out.
First, many people have given talks at past Condor Week conferences about what they've done, and you might find them useful. Here are a few I picked out:
* Condor To Every Corner Of Campus, by Preston Smith
http://www.cs.wisc.edu/condor/CondorWeek2010/condor-presentations/smith-purdue.pdf
* Pools of Virtual Boxes
http://www.cs.wisc.edu/condor/CondorWeek2010/condor-presentations/struble-pools-virtual-boxes.pdf
* Condor at EPFL
http://www.cs.wisc.edu/condor/CondorWeek2009/condor_presentations/jermini-condorweek09.pdf
Here are some much more technical recipes that could be considered best practices, though they are very focused on specific aspects as opposed to a broad description of deploying a Condor Pool:

And, of course, you can come to Condor Week and ask lots of questions!

I hope this helps.
